Description
This equipment is designed for dough proofing before baking. Proofing takes place under the influence of heat and moisture. This method heats the workpiece to the desired temperature and starts the fermentation of the dough.
Three component climate control system (steamheatcold) is used. The cabinet is a housing made of sandwich panels coated with stainless steel. Necessary temperature inside the cabinet is formed by heating elements located in the upper and lower part of the structure.
The steam generator increases the humidity to the required level. The baking trays are loaded into the cabinet by means of a loading conveyor and transported upwards in steps. When they reach the top level, the trays are transferred to the second tower, where they are transported downwards also in steps.
