Acoustic freezing has the following advantages in comparison with standard blast chilling: microcrystals of ice are formed between muscle fibres of the product, the cell structure is not disturbed, uniformity of cooling is provided - the surface and core of the product are frozen simultaneously, there is practically no weight loss during defrosting, the product does not lose moisture during cooking, after defrosting the taste of the product does not differ from the fresh one. Acoustic freezing preserves nutrients and increases the shelf life of the product without loss of quality.
