Description

Purpose, scope of application: The proofing cabinet is designed for proofing dough pieces of bakery products. The cabinet is used as part of galley equipment on naval ships and civilian vessels. THE CABINET RETAINS ITS SERVICEABILITY: ? During prolonged static tilting (without time limitation) in any direction up to ±15°.

? When rocking with an amplitude of 45° and a period of 7 to 9 seconds in any direction.

? When exposed to a relative humidity of 98% at an ambient temperature of 35°C.

? When exposed to ambient temperature for a long time (without limitation) from 1°C to 45°C.

? After exposure to salt (sea) mist. Distinctive features:

? Maintaining the set temperature and humidity in the proofing chamber by means of high-precision setting devices.

? Ensuring uniform temperature and humidity at any point in the proofing chamber through optimised airflow distribution and the operation of the steam humidification system.
